  • 6-7 halved Kerby cucumbers

  • 4 bay Leaves

  • 12 sprigs of fresh dill

  • 3 halved red chilli peppers

  • 2 tbsp of whole coriander seeds

  • 1 tsp of any kind of mustard seeds

  • 1 1/4 cups of white vinegar

  • 3 tbsps of high quality course sea salt

  • 2 cups of cold water

Combine the vinegar and salt in a stainless steel pan on the stove, and whisk until the salt is dissolved. Pour into a bowl and add the two cups of cold water. In a 2 quart jar, add the cucumber halves and the rest of the ingredients to your liking. Pour your vinegar mixture (brine) over and seal. Refrigerate for one day before enjoying. Keeps up to a couple of weeks refrigerated.
